Chicken Keema Masala!!


Ingredients:-
Chicken keema - ½ kg
Big onions - 4nos
Garlic paste- 3tbspn
Ginger paste- 1tbsp
Tomato puree- ½ cup
Kashmiri chilly powder- 2 tspn
Coriander powder- 1tspn
Garam masala powder- ½ tspn
Salt and Sugar as per taste.
Oil - ½ cup

Steps:-
1- Heat oil in a pan, add finely chopped onions and fry till it becomes light brown.
2- Now add ginger and garlic paste and cook for 5 mins.
3- Add tomato puree and cook for some more time.
4- Now add chilly powder, coriander powder, salt and sugar and cook until oil separates.
5- Now add chicken keema and cook until oil separates or its done.( no need to add water)
6- Finally add garam masala powder and chopped green chilly.

Chicken keema masala is ready...it's best served with roti/paratha/naan…….

Banana Pound Cake



Ingredients:-
Butter- 100gms
Maida – 1 ½ cup
Castor sugar- 1cup
Baking powder- 1tspn
Eggs- 3nos
Banana- 2nos
Vanilla essence- 1tspn

Steps:-
1- Sieve maida and baking powder.
2- Beat eggs separately till it doubles in volume.
3- Beat butter and sugar till creamy.
4- Add vanilla essence.
5- Add half portion of beaten eggs in above butter sugar mix and whisk at low speed for 2mins.
6- Add maida in small portion at a time and mix it.
7- Add remaining eggs and mix well.
8- Add mashed banana - mix well.
9- Pour the mixture in a dusted baking pan and put some cashews on top of it.
10- Now bake it for 30 to 35 mins at 160 degrees.

Fruit Cake


Ingredients:
Butter – 100gms
Castor Sugar – 1cup
Maida – 1cup
Baking powder- 1 tspn
Eggs – 3
Cashew- 1tspn
Raisin – 1tspn
Tutti fruity- 1tbspn
Black current- ½ tsp
Fruit essence- ½ tspn

Steps:
1- Sieve maida and baking powder.
2- Beat eggs separately till the volume doubles.
3- Beat butter and sugar till creamy.
4- Add fruit essence.
5- Add half portion of beaten eggs in the butter-sugar mix we prepared above; and whisk at low speed for 2mins.
6- Add maida in small portions at a time and mix it well.
7- Add remaining eggs and continue to mix for a few minutes.
8- Coat all mixed fruit with a little flour and mix it in batter prepared in the above step.
9- Now bake it in preheated oven for 35 to 40mins; at 180 degerees in microwave and at 150degrees in OTG.

Now enjoy your fruit cake with tea or coffee…….

Black Forest Cake



Ingredients:
Chocolate sponge cake – 1 no
Whipping cream - 150gms
Sugar syrup - 2 cups
Canned cherry - ½ cup ( chopped)
Rum - 1tspn
Cooking chocolate - 150 gms

Steps:
1- Whisk the whipping cream till it becomes fluffy, stiff and forms peak.
2- Now slit the chocolate sponge cake into 3 layers.
3- Add rum to the sugar syrup and sprinkle on lower layer; then apply whipped cream icing on that layer and put some chopped cherries over it.
4- Place second layer of sponge cake on it and repeat step 3.
5- Place third layer and sprinkle sugar syrup on it.
6- Level the cake from all sides.
7- Apply cream icing on the top layer and to the sides.
8- Apply grated chocolate on the top and sides of the cake. Decorate the cake by cream icing and cherries.

Chocochip Cookies

Ingredients:
All purpose flour- 1 ½ cup
Butter- ½ cup
Castor sugar- ½ cup
Brown sugar- ½ cup
Egg- 1 no
Soda- 1/4th tspn
Vanilla essence- 1 tspn
Chocochip- 1 cup

Steps:
1- Preheat the oven.
2- Cream butter and sugar together.
3- Beat the egg in butter-sugar mixture.
4- Dissolve soda in 1tspn hot water and add to the batter.
5- Now add flour and chocochip.
6- Drop the mixture on tray using a large spoon

7- Bake for 20 mins at 160 degrees .










That's it; you're done!!

Pineapple and Orange Cake


Ingredients:
Maida - 1 ½ cup
Sugar - 1 cup
Eggs - 3 nos
Baking powder - 2 tspn
Butter - ½ cup
Small pieces of pineapple and orange - 1 cup
Orange zest - 1 tbspn


Steps:
1- Cream butter and sugar together.
2- Sieve maida and baking powder and keep aside.
3- Beat eggs with a beater.
4- Now take the butter and sugar mixture and add egg mixture to it.
5- Now take a small portion of maida and add to the mixture. Repeat.
6- Now add pineapple and orange pieces.
7- Grease and dust the cake pan and pour the above cake mix.
8- Now bake the cake for about 40mins……

Sweet Bread (Tuti Fruity Bread :-))

Ingredients:
Maida- 250gms
Dry yeast- 3/4th tspn
Sugar- 60gms / 1/4th cup
Water – 100ml
Milk – 25 to 30ml
Butter- 2tbspn
Milk powder- 2 tbspn
Salt – ½ tspn
Tutti fruity – ½ cup
Mix fruit essence- 1 tspn

Steps:
1- Grease medium size loaf pan and keep aside.
2- Put yeast in a bowl, add 2 tspn sugar and warm water - mix them thoroughly.
3- Now put maida, sugar and milk powder in a bowl and mix together.
4- Add yeast mixture to it and make a smooth dough.
5- Now cream fat and salt and add them to the dough; knead the dough with ur palm and make a soft and silky dough. Cover it with wet cloth.
6- Keep the dough aside for 45 mins or till it doubles in volume.
7- Punch the dough to remove excess air.
8- Add tutti fruity.
9- Pan the dough in bread tin and let it rise.
10- Bake it in a preheated oven at 180 degrees for 20mins.

Now enjoy ur sweet bread with a cup of tea………….

Fish with mustard sauce (shorshe maachh)

Notice that I’ve used king fish fillet for this recipe but hilsa, bhetki and salmon can also be used.
Ingredients:
King fish – 1 kg
Mustard paste- 2/3rd cup
Curd – ½ cup
Haldi- 1 tspn
Green chilly- 4 nos
Kalonji (onion seeds)- 1/4th tspn
Salt and sugar
Mustard oil- ½ cup

Steps:
1- Marinate fish with haldi and salt.
2- Fry them and keep aside.
3- Now heat oil and add kalonji (onion seeds) and green chillies.
4- Add mustard paste and curd.
5- Now add haldi powder and cook till oil separates.
6- Add salt, sugar and ½ cup water; boil it for few mins.
7- Now add fried fish fillets and cook for 10 mins or to your desired level of curry thickness.
8- Lastly, sprinkle some mustard oil on it.


Enjoy your fish curry with plain rice……….

Kadhi Pakora

Ingredients (for pakora):
Masoor dal – ½ cup
Onion – 1 (finely chopped)
Green chilly – 1 (chopped)
Salt and sugar as per taste
One hand full of fresh dhania

Ingredients (for kadhi):
Curd – 1 cup
Besan – 2 tbspn
Water – 2 cups
Salt and sugar
Mustard seeds
Jeera seeds
Whole red chilly
Curry patta
Hing
Haldi
Slitted green chillies .

Steps:
1- Put besan in a bowl, add curd to it and make a paste; now add 2 cups of water - mix it well and keep aside.
2- Heat oil in a pan - add mustard, jeera, whole red chilly, curry patta and hing.
3- Now add besan and curd mix to it; boil it for a few minutes.
4- Add haldi, salt and sugar; cook it for some time.
5- Now put pakora into gravy.
6- Garnish with green chillies.

Serve with hot rice……….

Chicken Kofta Curry

Ingredients for Kofta:
Chicken keema - ½ kg.
Ginger garlic paste – 1 tblspn
Redchilly powder – ½ tspn
Garam masala - ½ tspn
Egg - 1 no
Salt – 1/4th tspn
Fresh coriander - 2 tblspn

Ingredients for Curry:
Big onion – 4 nos
Ginger garlic paste – 2 tbspn
Tomato puree – 1 cup
Curd - ½ cup
Water – 2 cups
Cloves – 5 nos
Black cardamom- 2 nos
Haldi – ½ tspn
Kashmiri chilly powder – 2 tspn
Garam masala – ½ tspn -
Salt- as per taste.
Sugar – 1 tspn
Oil – ½ cup


Steps:
1- Heat oil in a big pan or kadhai.
2- Pound cloves and cardamom and put them in hot oil.
3- Add onion paste and cook till it becomes light pink.
4- Now add ginger garlic paste and cook for atleast 10 mints on low flame.
5- Add tomato puree and cook till oil separates.
6- Now add haldi and kashmiri chilly powder.
7- Add salt and sugar and cook for 5 mints.
8- Add 2 cups of water and boil it for 2 mints.
9- Now add chicken koftas in the pan and cook it in low flame.
10- Lastly, add garam masala .

Exotic Aloo Dum

Ingredients:
Small potatoes - ½ kg
Tomato puree- ½ cup
Coconut paste- ½ cup
Curd – 2/3rd cup
Ginger paste – 1 tspn
Saunf or fennel seed- ½ tspn
Haldi- ½ tspn
Kashmiri chilly powder- 1 tspn
Garam masala powder- ½ tspn
Kasuri methi – 1 tspn
Hing- 1 pinch.
Salt and sugar as per taste.
Oil – ½ cup.


Steps:
1- Boil the potatoes.
2- Now fry them and keep aside.
3- Heat oil in a pan and add fennel seeds or saunf.
4- Now add ginger paste.
5- After 2 mints add tomato puree and cook for 10 mins.
6- Now add coconut paste and cook for 5 more mins.
7- Next step is to add haldi, kashmiri chilly powder and curd; cook till oil separates.
8- Now add salt, sugar and ½ cup water.
9- Add fried potatoes.
10- Cook for few more mins and add kasuri methi and hing.

You are done!! Now enjoy your delicious aloo dum :-)

Choco Walnut Brownie

Ingredients:
Cooking chocolate- 140gms
Butter- ½ cup
Coco powder- 2tblspn
Castor sugar- 200gms
Vanilla essence- 1tbspn
Eggs – 3 nos
Maida or plain flour- 100gms

Steps:
Preheat the oven .
1- Melt chocolate and butter together.
2- Add 2 spoon coco powder.
3- Add castor sugar.
4- Add vanilla essence and mix well.
5- Now add eggs (one by one).
6- Add maida or flour and mix it well.
7- Now add walnut coated with little maida.
8- Bake it at 150 degrees in OTG and in microwave convection at 180 degrees.

Now, brownie is ready for you to devour……. Njoy………..

Muffins Mania - 2

Continuing the muffins story from my last post…

Ingredients for Chocochip muffins:
125 gm maida or plain flour
25 gm coco powder
1 tspn baking powder
1 egg
60 gm sugar
2 tbspn oil
100 ml milk

Steps:
Preheat the oven.
1- Sieve maida , coco powder and baking powder in a bowl.
2- Now take a separate bowl and put egg, milk, oil and sugar.
3- Mix them well.
4- Now add maida mix to the egg mix gradually .
5- Add chocochip.
6- Now arrange the muffin trays with muffin cups.
7- Spoon mixture into the muffin cups.
8- Bake it for 20 mins.

Muffins Mania - 1

Ingredients for Orange and carrot muffins:
2 large eggs
175 gm castor sugar
150 gm butter
½ cup milk
200 gm maida or all purpose flour
1 carrot
Finely grated zest- 2 oranges
1 tspn baking powder
1 tspn vanilla essence.

Steps:
1- Preheat the oven at 150 degrees
2- In a bowl put egg, butter, sugar and whisk for 2 to 3mints.
3- Now gently add maida, carrot , vanilla essence and orange zest and milk.
4- Arrange the baking tray with muffin cups .
5- Now pour the mixture in muffin cups and bake it for 20 mints.

Kuch meetha ho jaye

As they say…kuch naya karne se pehle kuch meetha ho jaye…so, let me start my blog by sharing the recipe of a classic Indian sweet dish with you all - “Gajar ka halwa”.

I’ve a room full of exotic recipes that I plan to share on this blog and get feedback on. Please drop in your comments and questions...

Ingredients:
Gajar- 1kg
Milk- 1ltr
Milkmaid- 1 tin or 500gms
Khoya- 1 cup
Sugar- ½ cup
Ghee- 2 tbspn
Clove- 6
Tejpatta- 2
Elaichi powder- ½ tspn
Cashewnut and Kishmish


Cooking steps:
1- Wash and peel carrots.
2- Grate carrots khoya.
3- Put the gas on.
4- Put one heavy bottom wala pan on the gas.
5- Now put milk in the pan.
6- Bring it to boil.
7- Now add grated carrots.
8- Now add tejpatta and cloves.
9- Continue to cook it till the level of milk is 1/4th of the original level.
10- Now add milkmaid and continue to cook on low flame till its completely dry (or to your desired level of dryness).
11- Now add sugar and mix it well.
12- Add elaichi powder.
13- Now put off the gas and add khoya , cashew and kismish.
